Remember when cooking outdoors was just a hot dog on a stick or baked beans from a can? How about having to cook everything separate; beef on one side, veggies on the other?  That was very tasty at the time, but these days, our taste buds are more sophisticated. Barbecued foil dinners are the both convenient and delicious.  Here are not one, but two barbecue foil dinner recipes that will make your mouth water.

Salmon and Asparagus Foil Dinner

This recipe is not only healthy but very tasty.  Salmon is one of seafood’s most adaptable fish.  You can eat it raw and, when cooking, it absorbs spices easily.  The great thing is about these recipes is that you can do it for one or for 20 people.  But, in this case, we will do it individually.

Ingredients

  • 1 (6 oz) skinless salmon fillet
  • 8 asparagus spears, tough ends trimmed
  • 3 Tbsp olive oil
  • 5 cloves garlic
  • Salt and freshly ground black pepper
  • 2 thin sliced orange
  • Fresh dill sprigs
  • Aluminum foil 14” long

Preparation

  • Preheat the grill to 375˚F
  • Pour the 3 tablespoons of olive oil on the foil and set aside.
  • Sprinkle the salt and pepper on the salmon fillet and asparagus. Placed them on the center of the foil.
  • Place the dill sprigs on top of the salmon and place the 5 garlic cloves around.
  • Fold the aluminum foil, center first and then on the sides and place it on the grill.

Cooking time: 25 to 35 minutes

Chicken and Sweet Potatoes Foil Dinner

Roasted Chicken Breast in Foil Packet

For this recipe, chicken and sweet potatoes go hand in hand.  Some butter, salt, pepper, and garlic for seasoning, will do the trick.

Ingredients

  • 1 5oz. boneless skinless chicken breast
  • 8 slices of sweet potatoes with skin
  • 3 garlic cloves
  • 4 pieces of butter
  • Salt and pepper to taste
  • Aluminum foil 14” long

Preparation

  • Preheat grill to 325˚F
  • Place the 4 pieces of butter on the center of the foil
  • Sprinkle the salt and pepper on the chicken and place it on the center of the foil on top of the butter
  • Place the garlic cloves on top of the chicken
  • Place the sweet potato slices next to the chicken
  • Fold the aluminum foil, center first and then on the sides and place it on the grill

Cooking time: 40 to 45 minutes
