Summer time is just around the corner. Which means it is almost time to slather on the sunscreen and slip on your bathing suit. And it is also time for pool parties.

Throwing a pool party is seriously one of the best parts of summer – you get to relax, spend time with family and friends, and the kids (if you have them) are entertained. Bonus points for pool-side margaritas.

Since the goal is spending time with friends and family, preparing the food for your pool party shouldn’t be a hassle. With a low-key pool party menu in mind, here are some great tasty recipes for your next pool party.

Peanut Butter Fruit Dip

A lot tastier than peanut butter alone, and way easier to dip, making it the perfect pool party food. This fruit dip recipe takes plain old peanut butter and takes it up a notch. Plus, it only takes about five minutes to make.

Here is what you will need:

  • ½ cup peanut butter (I like creamy, but it’s up to you!)
  • ¼ cup milk
  • 8oz sour cream
  • 2 tablespoons honey
  • 1 teaspoon cinnamon

Stir everything up, then refrigerate. Serve with sliced apples, bananas, strawberries, or whatever other fruit you love! If you aren’t a fan of the tangy taste of sour cream, try subbing all or a portion of the 8 ounces with plain yogurt or whipped cream.

Sriracha Deviled Eggs w/Bacon

This recipe takes an old time party favorite, and takes it to a wonderful new place. Bonus: younger kids probably won’t even like these, so more for you.

Here is what you will need:

  • 1 dozen eggs
  • 6-8 tablespoons of mayo
  • 1 tablespoon of Sriracha
  • ½ cup of chives (optional)
  • 2 teaspoons of curry seasoning
  • 4 strips of crispy bacon, crumbled

1. Place eggs in pot of cold water, bring to boil. Cover, remove pot from heat, and allow to sit for 14 minutes. Remove eggs, rinse with cold water to stop the cooking process. Peel shells.

2. Cut eggs in half lengthwise using a sharp, thin knife.

3. Remove egg yolks, place in bowl. Mash with fork, then stir in all ingredients except bacon. Reserve some chives for garnish.

4. Place egg whites on a plate, and place yolk mixture in a zip top bag with one corner cut off. Squeeze yolk mixture into each egg white. Sprinkle with bacon and remaining chives. Serve chilled.

Turkey & Cheese Roll Ups

Rollups are the perfect party food because they are easy to make and easy to eat with your hands. Besides that, they are also really easy to dress up. These roll ups also include some all-important veggies and a seriously addictive dipping sauce.

Say goodbye to boring cold cut trays and hello to this upgraded turkey cheese roll up.

Here is what you will need:

  • 1 lb of sliced chipotle turkey
  • 1 lb of Muenster cheese
  • 2 large cucumbers
  • Toothpicks
  • 4 tablespoons of Sriracha
  • 2 cups of ranch dressing

Here is how to assemble your roll ups:

  1. Slice cucumbers in half lengthwise, then in half. Cut into stick approximately 2 inches long and ½ inch wide. (You can play with this.)
  2. Decide if your turkey or cheese will hold together better. This will be the outside of your roll up.  We’ve noticed that some of the better sliced turkeys from Boars Head tend to fall apart, but it doesn’t much matter.
  3. Place one slice (or half a slice if yours are very large) of turkey, top with one slice of cheese. Place cucumber stick on one end and roll turkey and cheese around it. Secure with toothpick. Roll all turkey and cheese.
  4. Mix 4 tablespoons of sriracha sauce into ranch dressing.
  5. Place roll ups on tray, serve with sriracha ranch for dipping.

Italian Pasta Salad

Making pasta salad for a large group can be a huge undertaking. This pasta salad skips the mayo, making it better for you, and the fresh tomatoes and herbs add a refreshing taste that is perfect for a hot day. This recipe is also pretty flexible, so feel free to adjust to your tastes.

Here is what you will need:

  • 1 package (1 ounces) rigatoni or twisty pasta
  • ½ cup of olive oil, or to taste.
  • 2 red bell peppers, diced
  • 1 green bell pepper, diced
  • 2 pints of cherry tomatoes, halved
  • 3 tablespoons minced garlic
  • Handful of fresh basil, chopped
  • Handful of fresh parsley, chopped
  • 1 teaspoon dry oregano
  • 1 cup finely diced Asiago cheese
  • Salt
  • Pepper
  • ½ cup grated parmesan

Here is how to assemble your fancy Italian pasta salad:

  1. Boil pasta until tender, drain, place in large bowl.
  2. Stir in enough olive oil to coat, but not pool in the bottom of the bowl.
  3. Mix in all other ingredients and chill.
  4. Upon serving, you might have to add more olive oil if the pasta absorbs too much.

That is what we call an easy pasta salad recipe!

Skewers

The ultimate pool side party food is skewers. The thing most people forget is that you can put anything on a skewer – it doesn’t have to be meat! Here are a few of my favorite skewers.

  • Cherry tomato, basil, and mozzarella balls. Drizzle with balsamic vinegar
  • Olives, feta cheese, cubed salami
  • Pineapple, strawberries, grapes (serve with fruit dip above!)
  • Cucumbers, tomatoes, feta cheese
  • Cocktail shrimp and grapes

The list could go on and on. Put anything on a stick and it looks fancy.

Bonus Recipe

Our goal was to provide easy to make recipes that would allow you to spend time with friends and family instead of spending all day in the kitchen. Then we ran across this recipe for cheese stuffed, bacon wrapped hotdogs.

Yes you read that correctly. You slice the hotdogs in half, stuff those suckers with cheese, and then wrap them in bacon. The good news is, they could be prepared way ahead of time and kept warm in the oven.
